Filipino Pineapple Chicken Adobo

    **Ingredients**
    • 2 lb Chicken Drumsticks
    • 1/3 cup Apple Cider Vinegar
    • 3 tbsp Soy Sauce
    • 1/4 tsp Black Pepper
    • 1 Bay Leaf
    • 1 tsp Brown Sugar
    • 4 Garlic Cloves minced
    • 1 tsp Fresh Ginger minced
    • 1/4 cup Water
    • 2 tbsp Canola Oil
    • 400 ml Canned Pineapple diced and drained

    **Instructions**
    1. In a large mixing bowl combine the chicken legs, vinegar, soy sauce, pepper, bay leaf, brown sugar, garlic and ginger. Let marinade for an hour in the fridge.
    2. Drain and reserve marinade. Pat chicken pieces dry with paper towel.
    3. Heat oil in a skillet or wok over medium high heat. Pan fry chicken, in batches, until golden brown.
    4. Combine browned chicken, reserved marinade and water. Bring to a boil over medium high heat then reduce heat to medium. Cover and let simmer for 15 minutes or until chicken is tender. Add more water if needed.
    5. Stir in pineapple and cook for 2-3 more minutes.
    6. Serve with steamed rice.

    That looks so good! I love Adobo, but never tried it with pineapple. Sounds even better with extra fruitiness.
