My pork belly came out of its bath and its accompanying sauce was all brown, with maybe a hint of green. Definitely not reddish, as in the pictures.

Nothing in the recipe is red, so I’m not sure if I’ve done something wrong or if the pics aren’t supposed to representative of the final product for a complete amateur like me. 😃

  1. Since I can’t figure out how to edit this, I wanted to note; these are the pics from Kenji’s recipe article.

    Mine didn’t look this good but (probably?) tasted about as incredible.

    13/10 will do it again, regardless of the color.
