Bought some kimchi today and it’s not the usual I get (country kimchi) and it’s missing that extra oomph and tastes… different? Taste super fresh, like it’s not ready. Should I try leaving it out to ferment more?

    Personally I like to enjoy kimchi in all its stages. I say put it away as normal and see where it’s at tomorrow.

    Yes if you want it more funky put it in a jar make sure the cabbage is submerged and let sit on the counter for a day or two , i use a paper towel and rubber band to cover it

    It’s fresh kimchi (겉절이). It goes well with bossam 😋

    It’s too dry to try and make it ferment more.
