Stella’s Klondike Bars Strawberry Edition

    After [my first successful Klondike Bars](https://www.reddit.com/r/seriouseats/comments/11uopw4/stellas_klondike_bars/) that are now all gone, I decided to try making strawberry versions. These turned out even better!

    Made these with less sugar going to 1:1 egg white ratio (both 85g), freeze dried strawberries (42g), 1/8 tsp vanilla instead of rose water, more milk (85g), 50% dark chocolate, and more chocolate coating (230g + 114g coconut oil).

    The swiss meringue and whip cream process felt quicker this time. The strawberries were messy as they had to get ground down.

    Cut into 3 x 4 to end up with 12 rectangles which were a better size for me. I double-boiled the chocolate coating instead of microwaving, so the cooling time took way longer. 2/3 went into my dipping container and the remaining 1/3 stayed on the pot removed from heat until I needed it. This removed the issue of the last portion of chocolate hardening from being too cold. I had way more leftover this time and poured it on a tray to harden for chocolate shards, so will scale it down to 215g + 107g coconut oil next time.
