Kenji blew my mind yesterday with his post about lining a stainless steel skillet with parchment paper to create a nonstick surface. I don’t like using my nonstick pan unless I have to, so I tried it tonight for some cod (Serious Eats blackened fish sandwiches recipe) and was really impressed! I’ll definitely keep using this method with fish, though I don’t know if it would work for eggs.

I know these are meant to be grilled, but I have two young kids and can keep them safe and occupied in the kitchen a lot more easily than I can grilling outside.
Could you share the Kenji post you’re referencing?
