Monday Meals: 1464 calories total (despite my oven trying to sabotage me)

Breakfast: veggies (broccoli, red onion, yellow pepper, asparagus, mushroom, spinach) topped with just egg, tomato and avocado. The veggies also have a “sauce” of nutritional yeast mixed with a little dairy free sour cream and veggie broth.
Lunch: too busy to cook so I grabbed a leftover beyond burger from weekend grilling- topped with Violife cheddar, pickles, mustard, ketchup and wrapped in iceberg lettuce
Snack: cashew yogurt mixed with chocolate protein powder, bananas, strawberries, slivered almonds
Dinner: this was supposed to be enchiladas, but my oven decided it didn’t want to preheat anymore. I almost gave up and ordered out Mexican food but I had already made the sauce and filling for the enchiladas so I just layered it in the crockpot and called it a day.
