Made this beef stew from a 1.75kg piece of beef round (I think – in my language we call it “meat to be pounded”/bankekjøtt).

Overall very happy with it. The taste was deep and satisfying. Stew consistency was not too thin. The potato/meat/carrot/pearl onion combo was great. The sourness and pungency of the onions really balanced the dish
Notes:
– the potato cubes took more than 60min to cook, half-submerged in liquid as they were. So throw them in earlier rather than later
– the beef benefitted from going past three hours
– alterations: we messed up and bought celeriac root, not celery stalks. I added celeriac cubes to the stew as per the instructions for celery, then discarded them (proceeding to eat them for an appetizer). I do not think the celery was too badly missed.
– we used canned peas and pearl onions – I think both were fine.
