I prefer to smoke it so I’ll do fat side down in the smoker. In a crock pot I guess it wouldn’t matter as much but I’d probably still go fat down.

Fatside up then finish off with a quick broil for that golden brown crispiness! Add some brown sugar rub for a yummy glaze

Depends on what i put in there with it.
If its on a bed of onions i do fatstide up.
If theres nothing with it i do fatside down and after a few hours do a flip

Fat down in a smoker. Doesn’t matter much in a slow-cooker.

I go with fat up. Don’t need to worry about any meats sticking above the liquid if the only thing sticking up is fat.
whether there’s an actual difference or not I’m not sure. I know fat up matters a lot more for grilling/bbq but I haven’t done any tests via slow cooker

Assuming you are making pulled pork it won’t really matter since the meat will be swimming in it’s juices. You’ll be taking it out when shredding anyhow so to make it easier I would leave it on top.

I always trim some for other uses and deeply score the fat cap on the top in a diamond pattern and rub in dry rub or just brown sugar. Leave fat side up
