I think u always want some liquid at the bottom – doesn’t have to be much but just a little to cover the bottom – maybe beef broth ?

I never add liquid when I do a pork should because juices and fat will start coming out. I would guess based on how lean the meat is what makes the difference. That posted recipe looked pretty good

I always add some carrots, celery and onions and one medium sized potato to the bottom. After 8-9 hours i take out the meat and put the veggies with some of the rendered fat and juices in the blender. Best gravy you can get. Add some lemon juice and oregano.

I find it important to keep lamb out of the water so it cooks more by steam (a pile of veggies works for this). I also use the higher temperature. I google for time instructions, they are generally consistent.
