It had never dawned on my that egg yolks and egg whites would cook at different temperatures, but it does make sense.

Although there are a couple of extra steps beyond “boil eggs and remove”, these are the easiest eggs I’ve ever peeled. Tons of time saved and frustration averted.

    I know he disparages the spoon thing, but once in a market in China I saw some 12 year old kid perfectly peeling dozens of boiled eggs at a pace of one every 10 seconds using a spoon, and decided this is the way. I still can’t do it like that kid but I can do ’em perfectly and fairly quickly.
