Look delicious with the hard crust and soft inside. I would’ve loved that in my 20s. With some Worcestershire sauce.
Unfortunately, as I age I favor medium or well as it’s not as chewy on old teeth.

That steak is blue. The fat cap is completely raw. I’d prefer anything apart from a fillet cooked to medium personally.

Invest in a thermapen, makes it easier to judge when the centre of your food is at the correct temperature. I got one for my dad who would always overcook steaks, now he can consistently put out medium-rare steaks all day.
