    We typically do dominos on pizza Friday, but today I got to take the wheel. I make alot of pizza at home, but at 5.5lbs of dough, this is by far my largest batch. My only wish is to have had better cheese to use! But we had preshredded “pizza cheese” in the freezer.

    I used u/J_Kenji_Lopez-Alt ‘s sheet pan pizza recipe

    1488g ap flour
    967g water
    45g salt
    5.6g yeast

    They did a 6 hour counter top rise, 36 hours in the fridge and 2 hours out of the fridge pre bake!

    I had a very humble home oven to cook them in, using 2 sheet pans as baking steels. The pies were cooked 2 at a time, 545 degrees for around 14 mins and a 1 minute broil.

    Edit! Forgot the sauce, 1 can crushed tomatoes, 4 cloves fresh crushed garlic, .5T salt .5T pepper

    Nice, adding vegetables as a side and an apple as a sweet dessert. Looks really good!

    My son would eat the veggies and apples before the pizza. I don’t get it. But that looks like a tasty and balanced meal for ankle biters.
