I had dinner at Casa Paco last night and was completely blown away by the mix of Spanish and Italian dishes, excellent cocktails, and really thoughtful service. I don’t really take photos, too busy eating, but [this Toronto Life feature](https://torontolife.com/food/whats-on-the-menu-at-casa-paco-chef-rob-bragagnolos-new-spanish-restaurant-and-bar-in-little-italy/) has some great ones. The *pasticcio di funghi* was a standout – we took a bite and immediately ordered another round of it. The grilled whole fish was incredible, with the loin presented first followed by the collar. Perhaps the best *pan con tomate* I’ve had too, with sublime boquerones and Manchego cheese on the side. I also LOVED the polenta, and I don’t usually like polenta – this version was whipped to an airy, melting texture. Honestly everything was great, I will be going back soon to try the rest of the menu.

Chef Rob came out and served the dishes, explained them, it all felt really special. I’m sure this will be one of the best new restaurants of the year. It truly feels like a labour of love, with the 4 owners cooking with passion and serving with obvious pride. It reminded me of when Tobey and Michael first opened Edulis and it was so intensely personal and warm and delicious (still is!), or when Doug Penfold was doing his awesome one-man show at Chabrol. People need to get to Casa Paco now, while you can still get a reservation!
