Spaghetti al pomodoro by Vito Chef (Salerno, Italy) – sauce made with first cherry tomatoes grown in my garden

    Spring has come so first tomatoes in my garden grown well, and I made a super easy sauce with them. Wow!!!

    **Recipe:**

    * 400gr large spaghetti
    * 500g of ciliegini or datterini fresh tomatoes
    * Extra virgin olive oil to taste
    * Garlic, basil, salt to taste
    * Parmigiano Reggiano to taste

    **Procedure:**

    1. Cut the cherry tomatoes
    2. Crush 2 pcs of garlic and let it brown in the pan for two minutes with 4-5 tablespoon of olive oil 2min
    3. Add the fresh tomatoes in the pan. After 1 min you can add the salt and stir (the salt help to release the special tomatoes sauce)
    4. If the tomatoes are too acid you can add a teaspoon of sugar (pay attention to the dose of tomatoes you are cooking, my recipe is for 500gr)
    5. Add water in a pot and when it starts to boil put the salt in it
    6. Cover and cook for 10min and stir from time to time
    7. Add the basil and stir
    8. Add a bit of boiling water and stir with the sauce (this is an important phases)
    9. Complete the cooking in the pan ( 2min)
    10. Add Parmigiano Reggiano and basil
