    I could swear I saw something that said they still remove the leftover broth at the end of the day, clean the bowl and everything, then add it back and build on it the next day. So it’s not as bad as it sounds.

    I actually ate there when i was in Bangkok and i must say i wasn’t blown away by any measure. Cool story nonetheless

    How TF have they prevented it from sticking to the bottom of the pan for all these decades is baffling…

  4. A tiny portion of it is saved for the next day’s broth, similar to how sour dough starter is used.

    broth tastes better when cooked longer if tasty things are being extracted from the broth materials but can start tasting worse when cooked too long or overcooked
