
I noticed that some Mexican restaurants sell guacamole that looks suspiciously the same. Are they getting it from Sysco? I’m sure one of you foodies know all the details. Please enlighten me. What I’ve noticed is that this type has an almost greasy taste, with bland chewy tomatoes and too much cilantro.

Guacamole, once exposed to air, turns brown very quickly. While I can’t say with 100% confidence, I don’t think Sysco prepares already made guac. If they do, that’s fucking gross.
Are you sure it’s real avocados? There was an article in SD eater how Mexican restaurants were using this type of squash instead. You can tell from the very smooth homogenous texture and how it doesn’t turn brown quickly like real guac
