    I love this. I generally hate when people do this about everything but the way we treat food is weeeeeeirdly affected by colonialism.

    It means that it’s often hard to find “fine dining” versions of foods we have plenty of but don’t see as worthy of fine dining for some reason. It’s why it’s much easier to find fine dining Spanish restaurants here than fine dining Mexican, for example.
