

This is a .8 lb New York strip steak cooked on a 13” charcoal grill with lump coals. I underestimated the amount of coals I needed so the heat was lower than I would’ve liked it to be. It cooked at about a medium heat on one side for 8 minutes then flipped it and cooked for another 5 or 6 then pulled for resting. Seasoned with just coarse salt and pepper
Totally satisfied with the level of doneness. I wasn’t shooting for rare specifically I just left it for and pulled it when I felt it had cooked long enough. Meat was super tender and juicy. Although the fat was not as rendered as I would’ve liked it to be. There were some pieces I spit out. This could be fixed by adding more coals and getting it hotter.
Overall delicious steak super easy I ate it right off the cutting board with an ice water. I followed it with whole milk and mixed fruit and that was my entire dinner Monday night.

Lol this type of steak was like my 53rd shot on the grill. You’re crushin it. Go for a teeny bit more indirect heat and a way hotter/closer coal bed for a crunchier sear.

That’s what I’ve realized. Need an insane amount of coals to get a crust and my grill is so small that I don’t have anywhere for indirect heat. Impossible for me to get a perfect medium rare it seems. Any tips appreciated.
