
I want to make a delicious beef massaman curry. My question is if I should cut my beef (chuck steak) into small cubes or small strips before putting in a sous vide bag or wait until after it is cooked to cut it smaller? Should I marinade it with the sauce or cook it in olive oil and then add the curry sauce afterward?
I’m looking to make something juicy with nearly fall apart meat. Please help.
