Steaks were cooked at 132 for two hours before being finished by torch. Salt, pepper, and minced garlic in the bag. Dash of salt before searing.
Smashed potatoes was three potatoes diced, half stick of butter, half stick of cream cheese, 1/2 cup whole milk, 2tsp salt. Sous vide at 194 degrees for 2hr. Crushed in the bag then kept warm by leaving it in the bath while cooking the steaks.
