**Instructions:**
1. Soak the dried shiitake mushrooms in warm water for 30 minutes until soft. Remove the stems and slice them thinly. 2. Remove the bones from the chicken thighs and cut them into chunks. Marinate with salt, light soy sauce, cooking wine, and white pepper powder for 10 minutes. 3. In a bowl, beat an egg and take only the egg white. Add a tablespoon of cornstarch and stir until well combined. Coat the chicken pieces with the egg white mixture. 4. Heat some cooking oil in a pan over medium heat. Fry the chicken pieces until golden brown. 5. Remove the fried chicken pieces and leave a small amount of oil in the pan. Add ginger slices and sliced shiitake mushrooms and stir-fry. 6. Add a small amount of salt and water, cover and simmer for 3-5 minutes until the mushrooms are soft. Then add the fried chicken pieces, stir-fry evenly, and let the mushrooms and chicken combine.
