I love cooking and sharing my Italian recipes 😉
It’s time to pick up good quality of peperoni, my garden in Salerno, Italy is full of red and yellow peperoni.
* 1 yellow and 1 red peppers * 1 onion * fresh basil to taste * EV Olive oil * salty ricotta (or parmigiano reggiano) * Pasta 400gr
**PROCEDURE:**
1. Cut the onion and the peppers in stripes 2. Fry the onion in EV olive oil and after 2 min add 2/3 tablespoons of water 3. After 5 min add the peppers, the basil and salt to taste, cover and cook for 10 min. 4. Add some tablespoons of water if the mix becomes dry 5. Turn of the heat, now Keep aside some stripes of peppers, for the creamy sauce blend the rest of peppers for 2-3minutes and put the sauce in the pan 6. The pasta should be drained when it is still a little bit hard, add pasta directly in the peppers sauce 7. Add ricotta to taste and cooking for 2 minutes with medium heat (pay attention to the cooking time suggested by the Pasta brand). 8. Serve it adding peppers stripes, ricotta cheese and fresh basil!!
