An easy, baked oatmeal that all of my kids actually ate! You can prep it the night before too. (Recipe in comments)

    **Ingredients**

    4 tb butter, melted

    4 cups rolled oats (quick are fine too)

    1 tsp baking powder

    1/4 tsp salt

    1/2 tsp ground cinnamon

    3 3/4 cups milk (any kind; I used almond)

    1/4 cup greek yogurt (any kind; I used unsweetened whole milk)

    1/4 cup honey/maple syrup

    2 large eggs

    2 tsp vanilla extract

    fruit/seeds for toppings

    **Method**

    * Grease a 3-quart baking dish.
    * Mix all of the dry ingredients in a large bowl.
    * Add the wet ingredients and mix well.
    * Pour into the baking dish, and add the toppings (I split mine up because I have four kids, and they all like different toppings).
    * Place in the refrigerator overnight to give the oats time to “soak” (this reduces the phytic acid, and makes it more digestible!)
    * The next morning, preheat the oven to 350 degrees.
    * Place the baking dish into the cold oven while it’s still preheating (so it doesn’t explode), and bake for approximately 45 minutes, until it starts to brown on the sides and is set.
    * Allow it to cool for about 20 minutes after it’s done.

    *This also freezes well! Cut the cooled oatmeal into bars and freeze. To reheat, microwave on high for 35 seconds.*

    Yum, this looks great. I love how it can be personalized. I’d make it with pecans and dried cranberries, but my son would want chocolate chips.
