First, put in 200g of cauliflower rice in the oven with 1/4 tsp of oil. Trust me, it gets crispy and the texture gets soft just like real rice. Cut up 200g of chicken breast and season well with cumin, taco seasoning salt and pepper till the color changes.
Then start chopping up 150g of broccoli, 1/3 head of lettuce leaves (I also added some leftover spinach.)
Let the chicken cook first on the pan for about 6 minutes until it’s done then add your veggies and just a splash of soy sauce to cook it down.
After the veggies are halfway done, add 150g of a sauce of your choice, I used a store bought curry for 75 calories per 100g and it was so delicious!
Lastly, stir a bit and let it simmer for another 3-4 minutes. Then serve up with the cauliflower rice and enjoy! Maybe top it off with some spring onions or coriander like I did.
Just like that you got a 550 calorie meal with 56g protein and only 55g carbs!

Cut up 1/3 of an onion and 3 garlic cloves and sautéed it on a medium heat pan with 2-3 sprays of olive oil.
Then start chopping up 150g of broccoli, 1/3 head of lettuce leaves (I also added some leftover spinach.)
