    For the chicken:
    • olive oil
    • rosemary
    • salt & pepper
    • All-purpose flour
    • lemon zest of one lemon
    • lemon juice of half of one lemon
    • chicken breast, sliced sideways to create two fillets

    For the Pasta Sauce:
    • Pasta of your choice
    • approx. 100-150mls of heavy cream (or light cooking cream)
    • approx. 1 teaspoon of vegetable stock powder
    • A pinch of Garlic & Herb seasoning
    • salt & pepper
    • shaved parmesan (as much as you want really)

    Instructions:
    • Put pasta into a pot of lightly salted boiling water
    • Slice chicken breast sideways, creating two breast fillets
    • In a medium bowl, add about 2-3 tablespoons of olive oil, rosemary, lemon zest and mix. Rub mix over chicken breast fillets. For best results, mix in the same bowl to ensure even coating.
    • In another bowl, add flour, salt and pepper. Lightly coat chicken breast fillets in flour mix.
    • Add chicken breast fillets to a hot frying pan with oil and cook, turning regularly to ensure even cooking.
    • Once cooked, remove chicken from pan and slice into bite sized pieces.
    • Remove pasta from heat and drain water (Keep approx. 1 cup of pasta water if you prefer a thinner sauce consistency).
    • Add heavy cream, vegetable stock powder, garlic & herb seasoning, parmesan cheese and salt & pepper to taste to pasta and mix until the parmesan is melted.
    • Add chicken, mix and dish up!
