Those egg noodles are godly when you boil them right. They’re like springy and have a bit of a bite on them. You could eat them alone with sesame oil and garlic and it would be amazing.
I’ve had them in another Thai dish that had that roast pork, lumps of crab meat and some broth that tasted like sweet fish sauce. Absolutely mind blowing.
