You need to add soil as the plants grow, potatoes turn green when exposed to sunlight. The green ones have developed solanine to a higher percentage. Next time start them in lower soil and add more as they get taller. You'll get a higher amount of harvest too.
In Idaho we kill off the green tops and let them sit for a week. That's to cure the skins then harvest. What I think is happening is natural. The tops will start to die off when they are close to being ready to harvest.
Living traditions homestead used weed blanket on one of their videos and it worked well for them. The potatoes that were above ground but under the blanket didn't turn green. 😊

I miss our big potato bin! It’s still out there, but it’s used for storage. 😂 If you didn’t grow up with a garden full of potatoes, you really should try a small scale. Potatoes are fun. So are onions, just don’t mix them. 😊
Those potatoes are unusually clean coming right out of the ground like that and where are the roots that are normally attached to them. This whole video seems fishy to me.

Green ones shouldn't be eaten. They are poisonous. Eve if its just the tip, solanine buildup is enough to cause illness.
