First time using Ermine frosting – Romantic Red Velvet cake

    So here’s what I learned about Ermine frosting

    PROs: Delicious and creamy. Tastes like Marshmallow fluff, but with a silkier texture. Very swoopy texture, so it applies easily with a palette knife.

    CONs: So fucking finicky!!! Frosting curdles if temperature is too low (less than 72 F) and is a soupy mess above 80 F. So crank your thermostat up to 75 before making this frosting. Also, it took over an hour to make and it is not stiff enough to pipe flowers.
