I’ve eaten a lot of crazy things but never iguana. I’m a chef and would love travel to Central America just for stuff like this. Was it served totally boneless or did you have to kind of pick around at it? What other dishes did they serve?

How is it? I am looking to come this weekend but I have never booked a flight in such short notice so scrambling to do research here. I will be there for about 5-6 days. How are things on the ground? Any things / experiences / place you would recommend visiting?
