I’d say that’s been baked rather than fried. Probably do them in batches to save time. Dry heat tends to make eggs come out rubbery as fuck. Either that or its been sitting under a heat lamp on the pass for 10 minutes

When I used to work away alot, I was absolutely gutted if the hotel had a brewers fayre pub .

I would say that that egg after cooking has been placed in some sort of bath of water containing a chemical the has formed a skin on the egg. If it had been a heat lamp surely the whole yolk would have hardened.
