This is a common way of savoring the meaty preparations. Chicken, Mutton and Fish thalis with fried silver fish served along one of the highway hotels. Its super spicy yet amazingly tasty served with millet flatbread and sticky indrayani rice (not in pic)

    Outside of India, in the “West”, we know so little about regional Indian cuisines!

    In my city in Australia, we have a lot of Punjabi restaurants, many Mumbai-style snack places, a few Tamil restaurants, and one Hyderabadi restaurant that I think has closed down.

    None of the rest of India’s rich culinary breadth is represented…

    I hope this means something else than what I, an American, understands it to mean. FYI, Silverfish are insect pests (*Lepisma saccharina*).

    For people interested in details of the plate :

    Picture 1 : (Chicken Thali )

    Starting from flatbread going clockwise we have ,

    Jowar Bhakri – Sorghum flour millets made by patting them on a flat wooden board by hands. It takes some real skills to do so since the dough is very delicate & it just takes a little wrong pressure for the bhakri to break apart before shaping it.

    Chicken Sukkha / Fry – Its a dry roasted version of meat where in Chicken is roasted with lots of onions, tomatoes, dry coconut ( Khobra) , chillies and spices with generous amounts of oil. If you do it right this can be one of the best dishes you will ever have in your plate.

    Red Rassa / Curry – There is no pieces of meat. Usually this thin watery curry is cooked using their trademark spice blend, whole spices and spare parts of chicken like wings, legs, liver, gizzard etc which gives it its unique meaty taste.

    Yellow Rassa/Curry – This is called Alani soup made by boiling mutton bones with minimal spices and turmeric. The bone marrow is the star here giving the dish some deep umami taste 🙂

    Onion and Lemon – Palate cleanser 😉

    King fish filet – coated with masala and flour deep fried. Traditionally they server it with a coriander-chilly chutney but here surprisingly they have mayo which is very rare.

    Red Curry – This is a fish curry made by boiling fish head, spare parts etc.

    Pink Sol Kadi – This is a digestive drink made with coconut milk, ginger, chilly & kokum (dried up mangosteen) extract.
