This is angel hair pasta tossed in a sauce I made with sun dried tomato pesto, spinach, lamb, and heavy cream. I added a poached egg and it was divine. I make another version of this with basil pesto, bacon, cherry or grape tomatoes, and heavy cream. I got bored with the typical American breakfast foods so I’m trying things that you’d see at lunch or dinner.
