

I bought these in December and forgot them at my mom’s house. She came to visit this weekend and brought it all back. I would assume they have been stored unrefrigerated. Says they are best by May 2nd. How long can I continue eating these? I know kimchi is not like meat or veg where you have to take the best by date more seriously, but could I get away with eating these over the next couple of months, for example?

As it’s completely sealed, I bet it’s extremely fermented, aka super sour. Sour kimchi is my personal fave! It is also the best ingredient to cook for any kimchi based stuff like kimchi fried rice, kimchi jjigae, fried kimchi with pork belly, etc. if you don’t really like too fermented kimchi.
