idk if that’s actually a called a stir fry since it’s not..fried? never know what to call my creations anyways/what they’re called!
Anyways, here’s the recipe:
heat a wok pan on high heat
reduce to low medium once hot and add 1 red onion, finely chopped. Fry/boil for a few minutes until tender.
Add soy sauce (around 1 tbsp), sriracha (or any chili sauce), tomato paste, mix well!
Add 1 garlic glove, finely minced and mixed with a tsp of ginger, diced. Stir again.
Add some brown sugar or sweetener of choice.
Then add bok choy(only the stems) cut into small pieces.
Mix well, then add water and/or vegetable boillon and frozen peas (about a cup).
Now add your spices! I added: spicy bell pepper powder, cumin, curry, cinnamon. I tried it and it was a bit too intense (too bitter+gingery).
I added 1/2 a can of canned tomato which helped! So if you’re making this don’t skip this step!
Bell peppers or any vegetables with a bit of zesty sweetness will work well I think.
I then felt like it needed a bit more cinnamon so I added that and then served it with quinoa.
Lastly added the bok choy leafs with we left out earlier. Stirred for a minute or two! Topped it with mixed greens(mostly arugula) , lemon juice and soy yoghurt. (Not shown here)
