Easy cucumber & tomato salad. One of my family’s favorite, easy salads. Makes a great side to go with anything grilled.
Chopped cucumbers & tomatoes with a drizzle of herb infused olive oil and a sprinkle of dried parsley & sea salt. No specific measurements…adjust amounts to your taste & number of people eating.

For some reason, my first thought at seeing the pic was that it looked like a chunky pico de gallo. On second, after seeing your ingredients, it’s a bit closer to a chunky, simplified, and adjusted for taste version, lol.
I need to get back into making something like this regularly. I’m perfectly happy to have it at every meal, lol.

I make this too! But I add avocado to mine, and I use grape tomatoes. Add a bit of olive oil, red wine vinegar, salt and oregano 🤤

Besides avocado, how could you “beef” this up for extra calories? I’m breastfeeding so need the calories.

I do a “Greek” version of this. I add red onion, feta cheese, and Kalamata olives. Yum!

And what a classic and great combo dressed up and cheap because theres no mozarella
