Fry onions in olive oil. Add diced spam and continue frying. Add crushed garlic and rice. Stir to keep rice from sticking to bottom of pan. Add soy sauce to your liking. Add ginger. Add vegetables to warm
In the meantime, in a small plan on a back burner add whisked egg and allow to cook like a pancake. You can also push your rice aside and make the egg in the same pan, but I find it easier to make it separately. Flip the egg after a minute and cook other side. Remove and cut into small pieces and add to the rice.
–This is a recipe that I often use for leftovers. I make extra rice the day before or I cook some up in the morning before work and let it sit in frig until I get home. I originally planned to make it tonight with leftover grilled chicken thighs. But came home and found out my teen came home during open campus lunch and ate the chicken and grilled sweet potatoes. So good ol’ emergency Spam stood in with the leftover grilled peppers.

If you stir fry green onions along with oil before you throw other ingredients in, it makes it more flavorful! I tried it last time with my leftover rice.

1/4 cup diced onions
garlic clove crushed
1/2 can spam diced
leftover vegetables (peppers and green onion here
