**Ingredients**
* 5 to 6 medium sized russet potatoes, sliced about 1/8″ thick – as close as you can * 2 TBS of minced garlic * Canola oil (or some other neutral oil) to lightly coat the pan and about a TBS to coat the potatoes * Spice mixture (2 tsp paprika, 2 tsp salt, 1 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder) – you will have a lot left over for future use like for a roast chicken rub * 3 strips of bacon, cut into 3rds lengthwise and then finely sliced across the grain to make bacon bits * 2 – 3 TBS butter, melted (see instructions for when to melt it) * Shredded cheese – amount up to you. We used colby-jack cheese but could also used cheddar or another cheese if you wish. Note, we shredded it fresh off the block with a grater – better quality and cheaper than buying pre-shredded with the chemicals * 2 – 3 green onions, green parts only – finely sliced * 1 dollop of sour cream or Greek yogurt * 10″ cast iron skillet – could try some other oven safe pan but I can’t vouch for how the recipe will turn out. Only ever used cast iron for this recipe
**Instructions**
* Preheat oven to 400 deg F * Slice potatoes into 1/8″ thick slices – do your best * Place potatoes into a mixing bowl, add the minced garlic and the 1 TBS of oil and mix thoroughly with your hands * Arrange sliced potatoes into concentric rings or a spiral around the pan – start on outer edge and work your way inwards * You’ll notice that you have roughly 10 rounded ends from the potatoes, place as many as you need into the center to fill in the hole * Do your best to get as much of the minced garlic onto the potatoes while you are arranging the skillet * Use your mixture of spices and sprinkle all over the potatoes thoroughly to your liking. You won’t come close to using all the spice mixture – save it for other applications like roast chicken * Put the bacon bits on top of the potatoes * Bake in 400 deg oven for 45 min * Remove from oven and place on range top. * Increase oven temp to 425 deg F * Melt 2 – 3 TBS of butter (30 sec in microwave should do it) and drizzle all over the potatoes * Place back in oven for 10 to 15 min. * Remove from oven and apply as much shredded cheese as you desire * Place back in oven for about 5 min just to melt the cheese * Apply the sliced green onion tops and a dollop of sour cream in center of the swirl * Eat
ETA – you can use a larger pan like a 12″ skillet or even larger. You’ll just have to scale up the ingredients accordingly – like maybe 7, 8 or up to 10 potatoes depending on how big of a skillet you use.
Potatoes – they’re cheap. This is a fun way to jazz them up and get some excitement. I used the dinner flair but this is more of a side dish. I’m sure you can make it your main entree by using a bigger pan. None of the ingredients should be out of reach. Omit bacon if you want to make it even cheaper, but you’ll have to sub in some more butter to drizzle over the potatoes for the first time in the oven.
