Third time smoking beef chuck ribs on my Pitboss 1150 pro series. It’s not an offset I know, but it did a fine job nonetheless. Just need to get a smoke tube to kick it up a notch. Overall, I’m pleased with the way these guys turned out.

How did you make the meat look so dark inside and yet retain the moisture?
