Went fishing Thursday and caught a nice one, filleted it, cured it over night and smoked till 150 (I take it a bit higher), finished with a brushing of hot honey and red chilies.

    Beautiful trout and a fantastic job smoking it. I love smoked trout. I use a glaze with honey, apple cider vinegar, cayenne pepper and brown sugar. Getting hungry just thinking about it.
