Date-sweetened banana bread (recipe in the comments)

    Here are the modifications I made :

    -used 2 cups of rolled oats (225g) instead of oat flour

    -didn’t add any nut

    -used 4 mashed bananas (340g) and didn’t put any on top

    -used Mazafati dates instead of Medjool (175g)

    -used 1/2 cup of hot water to soften the dates instead of milk

    I used a food processor to mix everything, but added the oats last, so that they would be broken down in smaller pieces, but not at flour level either.

    The result is super satisfying and tasty, very sweet even if my bananas weren’t that much ripe (yellow but not spotty) and the texture is great as well, not too dense or too moist.

    It would certainly be even better with the crunchy texture nuts would give, but it’s already quite calorie-dense as it is so I abstained. Next time I might add some buckwheat on top for a similar effect!

    That looks really yummy.

    I’m happily losing weight right now sticking to foods that I couldn’t gain weight on if I tried (rice, oats, veggies, fruits and beans). This feels like it doesn’t fit in that category. But would love to try it when I approach a normal BMI.
