Personally, I think the humble hand torch is one of the most amazingly useful and under-appreciated tools in the kitchen.
I use mine for getting a nice charred surface on meats without risk overcooking. The biggest benefit is that you can control the flame and direct the heat extremely specifically, exactly the opposite of a broiler or oven. it is great for getting even doneness on something that is not normally going to cook evenly because of it’s shape, like large pieces of meat.
Sometimes I cook from above and below at the same time, with something in a cast iron on a burner. It is fun and you can get great results, very quickly.
all that being said, this video is a poor example. I mean, he is pointing a very hot torch at a wood countertop and a wood pizza peel, little bit of a safety hazard. guaranteed to ruin both eventually, and melt whatever glues are holding the laminated board together and whatever finish applied to the wood counter no matter how gentle you are with the torch. And on that note, he is actually being TOO gentle with the torch, apparently trying to feather the flame so it doesn’t just start an inferno, but it is barely even melting the cheese at all lol, this is all for show, it is not even effective and wastes tons of fuel and probably has a lingering taste of gas
