Zucchini, mushrooms, green garlic, and peanuts on a rye flakes base

I made this simple yet delicious bowl for my dinner yesterday…
I cut one medium zucchini, one green garlic, and 2 cups of mushrooms and sautéed them all together with a little bit of water. Don’t add too much water, because zucchini and mushrooms are going to seep out, so it can become too watery.
I added a little bit of dried oregano, cilantro, rosemary, and basil, as well as pepper and turmeric.
At the same time, I briefly cooked around 1/2 cup of rye flakes that I had previously soaked for like 30 minutes. Again, don’t cook them too long if you don’t want porridge 🙂 I cooked them for a few minutes only.
Once my vegs were ready, I added them to the rye flakes base, and toss some peanuts for an extra dose of protein and crunchiness, and enjoyed hot 🙂
