Hi there, been walking around Amsterdam and walked in a street fair where I bought this extremely smelly bitter-tasting cheese. Smells like death literally and tastes way too strong… 🙂 Any help is appreciated! 🇳🇱🇳🇱🇳🇱

could be any kind of “overjarige kaas” basicly dutch style hard cheese that has ripened for at least 2 (usually 3) years.

Looks like an aged Gouda or similar wash curd aged cheese based on the color and texture.

The black wax and caramel color makes it look like Rembrandt gouda, but the smell and description don’t match, it should have a burnt sugar and toffee smell
