turkish eggs (cilbir) – my current go to fall breakfast/lunch

    recipe:
    – 2 eggs
    – greek yogurt, room temp
    – dill, chopped
    – clove of garlic, minced
    – squeeze of lemon juice
    – S&P
    – paprika
    – finely ground chili flakes
    – butter, 1-2 tablespoons
    – vinegar (for poaching eggs)
    – toasted slices of baguette for dipping

    instructions:
    1. mix yogurt, dill, garlic, lemon juice, S&P
    2. spread yogurt mixture on bottom of shallow bowl & set aside
    3. toast slices of baguette on stove, set aside
    4. melt butter in pan, add chili flakes, S&P, paprika
    5. heat butter mixture until begins to bubble, set aside
    6. poach eggs:
    1. crack eggs into sieve so excess whites drain, place them individually in small ramekins
    2. bring salted water to a boil, add splash of vinegar, create whirlpool in water and gently lower in egg, cooking them one at a time
    3. cook each egg for 2 1/2 – 3 min
    7. add poached eggs on top of yogurt spread, drizzle chili butter on top, sprinkle any remaining dill on top, serve with toasted baguette slices

    Looks yummy but not quite in the spirit of this sub, because it’s *supposed* to have eggs on it.

    But I’m not really complaining. I’ll be over in 1/2 an hour so have some ready for me.
