Gluten Tag. Just wanted to share with you my free (super nerd) book called “The Sourdough Framework”. The book is not a collection of recipes. It looks at the basics and mechanics behind sourdough fermentation. My idea was to provide you with a framework that helps you to follow every recipe out there on the internet. I made it free so that everyone starting with sourdough can begin with a (hopefully) good knowledge resource.
If you find a typo/want to improve something – the full book is open source. This is awesome! I was just starting to look for a book that explained the *why* so I wouldn’t be so constrained to a single recipe. Like why are starter amounts so different? If I have 150g of active starter but the recipe calls for 90g do I add it all anyway? And how does that change the fermentation time, etc? I only read the first few pages of your book but if it answers that eventually, I would be so happy!
