I wanted to make this pretty quickly so I omitted a lot of individual spices and just dumped in a bunch of chana masala powder.
While the chickpeas where pressure cooking with a tea bag (it gives them a nice, dark golden colour), I fried down a lot of finely diced onions with garlic and tomato paste. Then added a tin of plumb tomatoes and coconut milk, and added the cooked chickpeas along with a chana masala powder. A very tasty curry with minimal effort.
