Between starting a new job today, a dentist appointment, and about a hundred other things on my to do list I knew there was no chance of any leftover energy to make dinner! I threw everything in the cooker in between things this afternoon.
– 6 baby Yukon gold potatoes – 3 chicken thighs – 4 cloves of garlic – approx 1/4 bag of frozen pearl onions – a few handfuls of frozen spinach
Seasoned everything with some olive oil, salt and pepper, Italian herbs, and the Georgian spice blend from Trader Joe’s. I did brown the chicken on the stove before putting it with the potatoes but if I’d had skinless I probably would’ve skipped that step to save a few minutes.
I cooked everything on high for about 3 hours (spinach was added in the last 15 minutes) and served with some bagged salad on the side. Turned out really good!

This looks great.
Is that liquid just from the chicken and veg, or did you add something?
