Well folks. With your lovely help, I did it. I made the vegan beans. And they are absolutely amazing. I don’t even like mushrooms, and thought the mushroom/bean mix would be weird. My kid prefers this version and it has me thinking to incorporate little things into the standard recipe.

Suggestions I followed:
The use of coconut oil for that silky collagen feel

I couldn’t decide between portobellos or shiitake so I bought both

I added poblano

I grilled the poblano, green pepper, onion, and bellas (the shiitake were pre sliced so I carmesíes them in the Dutch oven)

I added smoked paprika. I did not add liquid smoke. I feel like it can be too overpowering and I wanted to see how it tasted and was going to adjust at the end. There was no need for it.

I cooked the beans with half of the veggies and added half in towards the end.

I added a chipotle in adobo, whole, and then ended up fishing it out after tasting because it was pretty spicy (I already added cayenne and black pepper). I remembered I’m cooking for Minnesotans.

I will definitely make this again. And I am going to grill my veggies next time I make standard red beans and see how that turns out. I bet it’ll be amazing.

    That’s how I do Black Beans, because they are the good kind of filling and not the bad kind of filling.
