I hate wasting food but I also hate eating food that I don’t like. I made the pineapple chicken tacos the other night and didn’t care for them: the chicken mix was bland and the chipotle sour cream was way too spicy. Needless to say there was a lot of food leftover. Today for lunch I made the leftovers into a giant quesadilla and it was delicious. I would make this recipe again to make it this way.

I used carb balance tortillas instead of the included ones.

I put low fat shredded cheddar and Monterey Jack inside the tortillas with the chicken mix.

Crisped them up in a skillet with a little bit of cooking spray.

Ate them with the leftover red cabbage and green salsa and used plain Greek yogurt instead of sour cream.

Because of the swaps I made I feel like my version was a little healthier although the original dish seems relatively healthy as is.

    I hope we have different taste because this recipe is already on its way to me! 😬 I like spicy things and mine is pork so we’ll see.
