Mashed potatoes and gravy was the star, made with pork broth. Green beans were great, flavored with frozen leftover ham. Sausages were okay.

    I don’t see pork broth very often, but I think it makes the best gravy.

    I buy pork butt when on sale. Cut the meat off the bone and use the meat elsewhere. Put the bone in my instant pot as well as about half pound of pork neck. Fill the pot with water, half an onion and couple stalks of celery. Pressure cook two hours, strain out the solids. Portion and freeze the broth in 1 or 2 cup portions.
